The Client

Green & Fortune is an award winning hospitality company specialising in events, restaurants, bars and cafes. The company was founded in 2008 and currently operates three London sites: Kings Place, Sea Containers and Central Hall Westminster.

The business is owned by Peter Millican and John Nugent. John is chief executive and Peter takes an active and supporting role behind the scenes. Each site has a general manager and these individuals have full accountability for their business units. G&F has a flat structure and does not run a head office style approach. There are only a few shared roles, mainly in HR, marketing and finance.

Growth has been measured and strategic and the company had enjoyed a very successful decade before Covid-19 struck. Covid-19 has forced the business to review how it structures the business for the immediate future. The operational teams across the business have become a single unit, so too have the events and sales team. It is key that each site retains its independence and identity, however the business has been streamlined to create efficiencies.

Green & Fortune have retained and supported all senior positions and believe they have the key components to get business back on track at the earliest opportunity. 2020 has been spent working through the associated challenges and as 2021 begins the company is well financed and ready for not only the re-build but also to push forward on further opportunities that will present themselves.

The Role

The next period for Green & Fortune will include the re-opening of existing businesses plus, the ‘second’ launch of Central Hall Westminster (which originally opened in March 2020). An experienced multi-site operator is required to lead the team over the coming twelve to fifteen months, possibly beyond.

The successful candidate will be responsible for overseeing and supporting the Executive Team to include all of the operations and functions across the business. Innovating in food and beverage, supporting and growing an events business and ensuring continued compliance across the functions of HR, payroll, safety as well as all legislative requirements, are part of this role.

Almost 70% of Green & Fortune revenue has hitherto been generated from event sales – conferencing, private dining, social parties and large scale hospitality experiences. The successful candidate will be responsible for the rebuild of this function as the London event scene starts to recover.

 

Key Responsibilities:
Financials

  • Full P&L accountability, circa £10m ++
  • Budget management
  • Analytical review and report writing
  • Driving event sales across the group

Team Management

  • Lead and direct the Executive Team
  • Constantly review, innovate and deliver change into the food and beverage offerings and lead on event sales initiatives
  • Understand and be engaged in all that happens in the business units

Relationships

  • Work hand in hand with all stakeholders
  • Pro-actively engage with senior people outside of Green & Fortune
  • Be the lead contact for their senior clients and partners

Consulting

  • Continue the work to date on a number of consultancy projects
  • Write high level financial and analytical reviews
  • Nurture relationships

Mobilisation and Re-Build

  • Be ready to relaunch the business and take it through the new growth stages
  • Continue through with the client commitments and agreements

Ongoing Projects

  • Pro-actively lead all current and future projects
  • Be able to lead and support on new business propositions and tenders
  • Manage the existing team to deliver successful outcomes

Operations

  • Deliver exemplary operations across the estate
  • Lead on progress companywide initiative – training, sustainability, staff welfare
  • Ensure a joined up business approach

 

The Candidate

The successful candidate will exude hospitality. Immaculate presentation and people skills are required. Great time management skills are required to ensure clients, managers and staff feel supported and there is visibility with all partners and stakeholders.

The appointed individual needs the flexibility to work around all the associated business pressures to deliver superlative outcomes. You will need to manage your own time and ensure you are in the business when required. G&F requires senior management presence in the business throughout the whole week based on business demands.

The business is a 7 day a week operation with peaks and troughs throughout the week. It is vital to ensure that all areas, be it a weekday lunch in a staff feeding operation, Sunday morning concert café trade, Tuesday conference, or indeed a Saturday bottomless brunch in the restaurant, have the same attention and care given to them.

As the business rebuilds visibility of the senior team will be key so you will need to balance your strategic input with being in amongst the team and customers. This is not a role that can be done from home or on zoom!

Working hand in hand with accounting partner, ETC Hospitality, is critical in delivering positive outcomes. The business will continue to develop their back of house systems in this contract period and proficient knowledge of the Fourth software platform, or similar, will be key. Also a strong working knowledge of EPOS systems is important as well as purchasing and costing programs.

It is vital that you have a deep understanding of the London market, inevitably by having worked across at least two or more businesses in the Capital. If not currently living in London then you will need to be in good striking distance of Kings Cross.
